From October 10 – 12, 2019, The District Grill Room & Bar, the award-winning steakhouse and grill restaurant at Bangkok Marriott Hotel Sukhumvit welcomes Michelin star Chef Daniele Repetti. The culinary maestro is one of five of Italy’s highly acclaimed Michelin star chefs, who will cook at five renowned Marriott hotel restaurants in Bangkok as part of the 11th Italian Cuisine & Wines World Summit.

When Chef Daniele and his wife, Lucy, opened Nido del Picchio in Carpaneto Piacentino in northern Italy, he quickly received a Michelin star. The Michelin guide describes Chef Daniele’s food as “creative and ingenious”. With more than two decades of experience, he is renowned for combining a limited selection of high-quality local ingredients to ensure each flavor, color and texture shines through.

The passionate Italian’s intention is to arouse emotions and feelings through food. “My guests are not customers but friends,” he says. “I give them moments to remember by paying attention to the smallest details. My cuisine is expressive, contemporary and pioneering.”

The Italian Cuisine & Wines World Summit is the world’s biggest celebration of Italian cuisine. It brings together the best Italian restaurants, Michelin-starred chefs, food and wine producers, and culinary experts to celebrating, promoting and educating consumers about the beauty of Italian cuisine and ingredients. This year’s summit kicks-off in Bangkok before moving on to Hong Kong and Dubai.

Chef Daniele’s exquisite 5 – course dinner menu and a-la-carte menu will include highlights such as smoked lamb loin with pepper cream and Jerusalem artichoke, Orecchiette pasta with lobster, zucchini and saffron and Braised veal cheek with chanterelle mushroom and polenta.

EXCLUSIVE INTERVIEW

How long have you been cooking professionally?

It began immediately after my studies. When I was twenty years old, I ran the kitchen of the restaurant “El Toula” in Rome. This experience has profoundly marked my professional growth in an international environment.

 

What is your inspiration to become a chef?

Arousing emotions and feelings through food; this is my philosophy and mission. And I think everything started from the emotions that cooking stimulates in me. My guests are not customers but friends I host, to give them moments to remember, by paying attention to the smallest details. My cuisine is based mainly on raw materials; it is an express, contemporary and pioneering cuisine.

 

Can you name one ingredient you love cooking with?

Few elements on the plate, dictated by the Emilian roots, by the contaminations of the past, by the health and the study I carry out together with my staff.

I can talk about the great tomatoes that a local farmer from my region is providing me. More than biologic, they are made with love or all the vegetables for the typical Emilia Romagna side dish “alla giardiniera”.

I can say that when the raw material is excellent, my imagination takes off.

 

Do you have a “signature dish” or favorite dish you enjoy cooking?

Rabbit. In our menu you can find it. Bread crumbed leg, breast with basil and olives, liver mousse with whisky and black rice gel.

 

What is your favorite cooking gadget?

Simply the pan.

 

Any advice you would give to someone wanting to become a chef?

It’s not easy giving advices and nowadays that everything is becoming a show, it seems that being a chef is cool, like a rock star.

But you need to work hard, have a lot of expertise, study on raw materials. Being a chef is a life mission: no personal schedules, little time for growing other interests and for yourself. Only with a life mission and dedication you can handle these difficulties.

Feeding others can be the best or the hardest job in the world.

All five chefs will also cook at a special dinner when the event is launched at Rossini’s, Sheraton Grande Sukhumvit, on Wednesday October 9, 2019.
