New Spring Menu – New Italian Cuisine at La Scala by David Tamburini

The Sukhothai Bangkok, a leading hotel in Thailand located in central Bangkok, has unveiled an exciting new La Scala Spring Menu by Chef David Tamburini.

David takes inspiration from the freshness of the spring season ingredients that allow him to be creative and to introduce various outstanding dishes within this recently launched menu. Spring is an amazing season for a chef that really feels the power of nature after a cold winter season, with green vegetables and their freshness, the fava beans, green peas, the first wild garlic leaves, asparagus, mushrooms and the new flowers with their colours and aroma.  This is a season of fresh, light tastes and acidity, guidelines that David would like to pass to on his customers at La Scala, complete with the “emotions” of nature.

This is David’s second menu following the re-opening of La Scala in November 2017. He decided to keep just 20% of the old menu for two main reasons, firstly seasonal, as a lot of ingredients in the old menu are currently out of season, and secondly because David wanted to create a more unique menu that focuses upon his ideas of preparing dishes such as Eggplant spaghetti, Octopus and potato and vinegar figs.

David approaches the table and presents his dishes with his signature natural techniques, as he believes that customers should experience the cuisine itself, the flavours, the colours and the beauty of his cooking that surpasses excellence due to his knowledge that comes from years of experience.

At La Scala all diners will enjoy a fresh, modern approach to Italian cuisine for both lunch and dinner, including a “Natural” tasting menu being exclusively served at dinner.
