From 2 – 4 June 2018, experience the 2 Michelin-starred contemporary European cuisine with Korean influences of Chef Sang Hoon Degeimbre at The Reflexions, the Michelin Plate-honoured modern French cuisine restaurant  at The Atheenee Hotel, a Luxury Collection Hotel, Bangkok.

Chef Sang Hoon Degeimbre, born in Korea but adopted at the age of five by a Belgian family, trained as a butcher and became a hugely successful sommelier. Then in 1997, he started his own restaurant, L’Air du Temps, with his wife in Belgium. He achieved one Michelin Star in 2000 and two Michelin Stars in 2008.

The largely self-taught chef has developed a singular cooking style with unusual flavour combinations a feature. Add in a rekindled love of Korean cuisine and a passion for vegetables grown in L’Air du Temps’ 3-hectare garden and it’s clear why Degeimbre is known as a flavor magician finding perfect balances between contemporary European cuisine and Korean influences.

The celebrated chef presents 3- and 5- course set menus for lunch, and 7- and 9-course set menus for dinner, all with optional wine parings.

Prices start from THB 2,288++ per person.

The culinary voyages of discovery include amuse bouches such as Foie Gras, Punzu, Bulgur; Mussels & Fries; Tomato & Shrimp. Other courses feature such prime ingredients as green asparagus, cod fish, blue lobster, and eel. For instance, green asparagus is worked with bacon croutons and sweet wine sauce. Cod combines with apple, fennel, anchovies, bulgur. Blue lobster is matched with tomato jangagii and geranium flowers. Eel is juxtaposed with foie gras and black sesame. Not to mention, 20 species of vegetables herbs flowers and lacto-fermented juice; bean peas, chanterelle, meat juice; “Sunday in Belgium”, chicken, apple, potato; “Pain Perdu salsify; and Cuberdon potatoes, white chocolate.
